Stewed Pumpkin (Trinidad Style)

Simple, savory Caribbean-style stewed pumpkin.
Ingredients
2 lbs pumpkin
1 medium onion, chopped
1½ tbsp garlic, minced
1 tsp thyme leaves
1 tsp black pepper
1½ tsp salt (to taste)
½ cup brown sugar
1 cup water
2 tbsp oil
Instructions

Cut pumpkin into pieces approximately 2 inches by 1 inch and 1 inch thick

Heat oil over a medium heat

Sautee Onions ad garlic until onions are translucent

Add 1. Pumpkin 2. Thyme 3. Black Pepper 4. Salt 5. Brown sugar 6. water

Cover and tell simmer for 10 minutes then stir. The pumpkin should be cooked in 20-25 minutes depending on the size of your pieces.

Serve hot as a side dish
