Butter Fried Swai

Pan-fried swai fillets in golden butter.
Ingredients
5 swai fillets
2 tsp salt (for seasoning)
1 tsp black pepper (for seasoning)
½ cup flour
2.5 cups cornmeal
2 tsp thyme
1 tbsp onion powder
1 tbsp Old Bay seasoning
2 tsp cayenne
2 tsp salt (for breading)
2 tsp black pepper (for breading)
1 stick salted butter
6 oz oil

Season fish with 1.5 tsp salt and 1 tsp black pepper

Mix all dry ingredients in a shallow long dish: 1. Flour 2. Corn meal 3. Onion powder 4. Thyme 5. Cayenne 6. Old bay

Heat a large frying pan over medium heat. Once the pan is hot add butter and oil.

Dredge swai filet in the breading one filet at a time.

Fry swai on each side for 3-4 minutes

Remove swai from the oil and place on paper towels to drain excess oil
